A healthier version of your favorite brunch item!
White flour and white sugar are commonly found in pancake recipes. While they yield an amazing result, white flour and sugar are processed and refined, therefore they are not “whole” foods. Eating whole foods as much as possible is SO important. This is the easiest way to ensure we are getting all the vitamins and nutrients our body needs to function at its highest level! But don’t fret… YOU CAN STILL HAVE PANCAKES!!!
Here is a quick, easy recipe for you. Free from refined flour and sugar! You can top it with fruit, nuts, dark chocolate, maple syrup, or whatever else your heart desires!

Gluten-Free, Refined Sugar-Free Pancakes

Serves: 2 servings
Ingredients
1¼ cups Gluten-Free Oat Flour, (dry oats blended to powder)
1 cup Plant-Based Milk + 1/2 tsp vinegar (this makes vegan buttermilk!)
1 tsp Vanilla
½ a Ripe Banana
2 tsp Baking Powder
½ tsp Cinnamon
A pinch o' Salt
Instructions
Make oat flour first. Simply blend 1 1/4 cups of gluten free oats until it reaches a flour-y consistency.
Blend everything in a high-speed blender or Nutri-Bullet until smooth.
Allow this mixture to sit for 5 or 10 minutes so the oats can absorb the liquid. (IF YOU SKIP THIS STEP YOU WILL HAVE THIN AND RUNNY PANCAKES!!!)
Pour 1/4 cup sized batter blobs onto a pancake griddle or skillet, and cook each pancake for 2 minutes on each side.
