-Banana Bread (GF, RSF)-

For everyone requesting gluten-free recipes, here is one I love! Most gluten-free baked good recipes that I have tried have been grainy and dry. While this one is slightly grainy (I used Bob's Redmill GF Blend), it is super moist and the banana flavor is amazing!  I also found that topping each slice with some vegan butter (Earth Balance is GF) helps give a smoother mouthfeel.

I also decided to make this refined sugar free, because… why use processed sugar if you have unrefined products in your pantry to use instead!? Not to mention, maple syrup tastes amazing with walnuts! Try toasting the walnuts beforehand for a stronger walnut flavor throughout the bread!

Serves: 1 Loaf

Ingredients

2â…“ c gluten-free AP flour

¾ tsp baking powder

¾ tsp baking soda

½ tsp cinnamon

¼ tsp salt

4 RIPE Bananas

â…“ c maple syrup or agave

½ c plant-based milk

â…“ coconut oil

2 Tbsp molasses

1 tsp vanilla

1 tsp apple cider vinegar

½ c Walnuts (chopped)

¼ c Walnuts (for topping)

Instructions

  1. Preheat oven to 350* F.

  2. Prepare an 8x4 loaf pan with parchment paper or cooking spray.

  3. Combine all your dry ingredients in a large bowl and set aside.

  4. In a separate bowl, mash the bananas with a fork. Add maple syrup, plant milk, oil, vinegar and vanilla. Whisk until combined, then add in all your dry ingredients and 1/2 cup of walnuts!

  5. Mix until you have a uniform batter with no wet or dry spots, and then pour your batter into your loaf pan.

  6. Top with remaining walnuts and bake in a preheated oven for 25-35 minutes, or until a knife inserted into the center comes out clean.

  7. Allow to cool for 30 minutes! Then... Enjoy!!!
