Marinated Tomatoes

Ingredients:

1 1/2 cups of cherry tomatoes 1 clove garlic, minced

1 tsp dried Italian herbs

3/4 tsp garlic powder

1/2 tsp black pepper

1/4 tsp salt

1/4 tsp smoked paprika - optional 1/2 cup extra virgin olive oil, a good quality tasty kind!


Directions:

  1. Chop cherry tomatoes in half and place them in a 16oz jar.

  2. Add seasonings and oil directly into the jar.

  3. Screw the lid on tight and GENTLY shake the jar to coat the tomatoes.

  4. You can eat these right away or store them in the fridge for up to 7 days!

Marinated tomatoes are great alone but even better added to toast, a salad, in an omelet or quiche, or... IN PASTA! Just please make this, you won't regret it.


Note: After putting these in the fridge, the oil may solidify. This is normal. Just pop it in the microwave for 8-10 seconds and the olive oil will be liquid again.
